Elderly Man tells cop to arrest him and talk him to jail, walks away the closes distance, touches cop, taps him and tells him to shut up after explaining to him the issue and that he just needed to sign a citation. Ugh, just sign the citation, give us a break with these self inflicted issues.

The use of force is unfortunate, but the man did keep on getting physical with the cop. The cop was patient dealing with that up until the last flick and "shut up" then threw him to the ground to arrest him. There's not much you can argue about here, the cop had enough justification to do what he needed to do. He could've been more gentle given the age of the defendant.
Lesson here is don't close your distance to a cop, don't touch the cop and don't tell him to shut up if he's not being an a--hole to you.
Update: Cop was charged, but AG dismissed it for exactly the reasons I said. https://www.nbcnews.com/news/us-news/oklahoma-ag-drops-charges-officer-threw-71-year-old-man-ground-traffic-rcna185616
